Easy Scouse

This is a very easy recipe.


1 bag of lamb mince
1 red onion chopped
1 bag of carrots, peeled & chopped how you like, sliced or chunks
1 bag of potatoes
Chicken stock

Method (using a slow cooker)

Peel and slice potatoes and boil for 15 mins
Place lamb mince, onion and carrots into a slow cooker
Add 1.5 litres of chicken stock
When the potato slices are cooked, drain and tip into a slow cooker with everything else
Leave to cook for 4 – 6 hours on medium.
When ready, you can thicken up with chicken gravy, but I tend to leave it watery as it thickens with the potato anyway.
Serve with crusty bread, red cabbage & beetroot (as preferred).
